Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups potatoes peeled and diced
  • 3 cups chicken or beef broth
  • 2 cups milk whole milk or 2%
  • 2 cups shredded cheddar cheese
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 tsp smoked paprika optional
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/4 cup green onions or parsley for garnish optional

Instructions
 

  • Cook the Beef: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess grease and set the beef aside.
  • Sauté Aromatics: In the same pot, melt the butter over medium heat. Add the onion and garlic, sautéing until softened, about 3-5 minutes.
  • Cook the Potatoes: Stir in the diced potatoes, chicken or beef broth, smoked paprika, salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.
  • Make it Cheesy: In a small bowl, whisk the flour into the milk until smooth. Slowly pour this mixture into the pot, stirring constantly. Allow the soup to thicken for about 5 minutes.
  • Add the Cheese: Stir in the shredded cheddar cheese and heavy cream, mixing until the cheese is fully melted and the soup is creamy. Add the cooked ground beef back to the pot and stir to combine.
  • Adjust Seasoning: Taste and adjust salt and pepper as needed.
  • Serve: Ladle the soup into bowls, garnish with green onions or parsley, and serve hot with crusty bread or crackers.

Notes

  • Swap ground beef for ground turkey or sausage for a twist on the flavor.
  • For extra veggies, add diced carrots or celery when sautéing the onion and garlic.
