Philly Cheesesteak Soup with Bacon in One Pot

- For the Soup:
- 4 slices of bacon chopped
- 1 lb thinly sliced beef ribeye or sirloin, cut into bite-sized pieces
- 1 tbsp olive oil or butter
- 1 medium onion thinly sliced
- 1 green bell pepper thinly sliced
- 1 cup mushrooms sliced
- 2 cloves garlic minced
- 4 cups beef broth
- 1 cup heavy cream or half-and-half
- 1 tbsp Worcestershire sauce
- 1 tbsp cornstarch mixed with 2 tbsp water optional, for thickening
- Salt and pepper to taste
- For the Cheesy Toast:
- 4 slices of crusty bread sourdough or baguette
- 1 cup shredded cheese provolone, mozzarella, or cheddar
- 2 tbsp butter softened
Cook the Bacon and Beef:
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pot.
Add the beef to the pot and cook until browned on all sides. Remove and set aside with the bacon.
Sauté the Vegetables:
Add olive oil or butter to the pot if needed. Sauté the onion, bell pepper, and mushrooms until softened, about 5 minutes. Add the garlic and cook for another minute.
Simmer the Soup:
Pour in the beef broth and bring to a simmer. Add the Worcestershire sauce, heavy cream, and the cooked beef and bacon. Season with salt and pepper.
If you prefer a thicker soup, stir in the cornstarch slurry and cook for 3-5 minutes until slightly thickened.
Make the Cheesy Toast:
Preheat the broiler. Spread butter on one side of each slice of bread and place on a baking sheet. Top each slice with shredded cheese.
Broil for 2-3 minutes, or until the cheese is melted and bubbly.
Serve:
Ladle the soup into bowls and garnish with extra cheese or chopped parsley, if desired. Serve with the cheesy toast on the side for dipping.
