Ingredients
  

  • For the Soup:
  • 4 slices of bacon chopped
  • 1 lb thinly sliced beef ribeye or sirloin, cut into bite-sized pieces
  • 1 tbsp olive oil or butter
  • 1 medium onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 cup mushrooms sliced
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 1 cup heavy cream or half-and-half
  • 1 tbsp Worcestershire sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water optional, for thickening
  • Salt and pepper to taste
  • For the Cheesy Toast:
  • 4 slices of crusty bread sourdough or baguette
  • 1 cup shredded cheese provolone, mozzarella, or cheddar
  • 2 tbsp butter softened

Instructions
 

  • Cook the Bacon and Beef:
  • In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pot.
  • Add the beef to the pot and cook until browned on all sides. Remove and set aside with the bacon.
  • Sauté the Vegetables:
  • Add olive oil or butter to the pot if needed. Sauté the onion, bell pepper, and mushrooms until softened, about 5 minutes. Add the garlic and cook for another minute.
  • Simmer the Soup:
  • Pour in the beef broth and bring to a simmer. Add the Worcestershire sauce, heavy cream, and the cooked beef and bacon. Season with salt and pepper.
  • If you prefer a thicker soup, stir in the cornstarch slurry and cook for 3-5 minutes until slightly thickened.
  • Make the Cheesy Toast:
  • Preheat the broiler. Spread butter on one side of each slice of bread and place on a baking sheet. Top each slice with shredded cheese.
  • Broil for 2-3 minutes, or until the cheese is melted and bubbly.
  • Serve:
  • Ladle the soup into bowls and garnish with extra cheese or chopped parsley, if desired. Serve with the cheesy toast on the side for dipping.

  • Bread Alternatives: Use hoagie rolls or French bread for a more authentic Philly cheesesteak vibe.
  • Cheese Options: Provolone is traditional, but you can use any melty cheese you like.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop.
