- 1 ½ lbs sirloin steak cut into 1-inch cubes (or ribeye, strip steak)
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- For the Potatoes:
- 1 ½ lbs baby potatoes halved
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- For the Garlic Butter Sauce:
- 3 tbsp unsalted butter
- 5 cloves garlic minced
- ½ tsp red pepper flakes optional
- 1 tbsp fresh parsley chopped
- 1 tsp lemon juice optional, for brightness

Cook the Potatoes:
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add baby potatoes, season with salt, pepper, and garlic powder, and cook for 10-12 minutes, stirring occasionally, until golden brown and fork-tender.
Remove from the pan and set aside.
Sear the Steak Bites:
In the same pan, add 1 tbsp olive oil over high heat.
Add steak cubes, season with paprika, salt, and pepper, and sear for 2-3 minutes per side until browned. (Do this in batches if needed to avoid overcrowding.)
Remove steak from the pan and set aside.
Make the Garlic Butter Sauce:
Reduce heat to medium-low. Add butter, garlic, and red pepper flakes, stirring for 30 seconds until fragrant.
Return potatoes and steak to the pan, tossing to coat in garlic butter.
Stir in fresh parsley and a squeeze of lemon juice (if using).
