Ingredients
  

  • For the Steak Bites:
  • 1 ½ lbs sirloin steak cut into 1-inch cubes (or ribeye, strip steak)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • For the Potatoes:
  • 1 ½ lbs baby potatoes halved
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • For the Garlic Butter Sauce:
  • 3 tbsp unsalted butter
  • 5 cloves garlic minced
  • ½ tsp red pepper flakes optional
  • 1 tbsp fresh parsley chopped
  • 1 tsp lemon juice optional, for brightness

Instructions
 

  • Cook the Potatoes:
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add baby potatoes, season with salt, pepper, and garlic powder, and cook for 10-12 minutes, stirring occasionally, until golden brown and fork-tender.
  • Remove from the pan and set aside.
  • Sear the Steak Bites:
  • In the same pan, add 1 tbsp olive oil over high heat.
  • Add steak cubes, season with paprika, salt, and pepper, and sear for 2-3 minutes per side until browned. (Do this in batches if needed to avoid overcrowding.)
  • Remove steak from the pan and set aside.
  • Make the Garlic Butter Sauce:
  • Reduce heat to medium-low. Add butter, garlic, and red pepper flakes, stirring for 30 seconds until fragrant.
  • Return potatoes and steak to the pan, tossing to coat in garlic butter.
  • Stir in fresh parsley and a squeeze of lemon juice (if using).

Notes

  • Best Steak Cuts: Use sirloin, ribeye, or strip steak for the juiciest results.
