Step 1: Prepare the Lobster Tails
Using kitchen shears, cut down the center of the lobster tail shell, stopping at the tail fin.
Gently pull the meat out of the shell, resting it on top while keeping it attached at the base.
Brush the lobster meat with olive oil, then season with salt, pepper, smoked paprika, and garlic powder.
Step 2: Cook the Lobster
Grill Method:
Preheat the grill to medium-high heat (400°F/200°C).
Place the lobster tails meat-side down on the grill for 3-4 minutes, then flip and cook another 4-5 minutes, basting with cowboy butter until opaque and slightly charred.
Oven Broiled Method:
Preheat the broiler to high.
Place the lobster tails on a baking sheet and brush with some cowboy butter.
Broil for 8-10 minutes, basting with butter every few minutes, until the meat is opaque and reaches an internal temp of 140°F (60°C).
Step 3: Make the Cowboy Butter
While the lobster cooks, mix all cowboy butter ingredients in a small bowl.
Taste and adjust seasoning as needed.
Step 4: Serve And Enjoy
Drizzle or brush more cowboy butter over the cooked lobster tails.
Garnish with extra parsley and lemon wedges.
Serve immediately with crusty bread or grilled vegetables.
