Ingredients
  

  • For the Lobster Tails:
  • 2 lobster tails 5-6 oz each
  • 1 tablespoon olive oil
  • Salt And black pepper to taste
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • For the Cowboy Butter:
  • 4 tablespoons unsalted butter melted
  • 2 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon crushed red pepper flakes adjust for spice
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh chives
  • 1/2 teaspoon fresh thyme leaves
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper optional, for extra heat
  • Salt And pepper to taste

Instructions
 

  • Step 1: Prepare the Lobster Tails
  • Using kitchen shears, cut down the center of the lobster tail shell, stopping at the tail fin.
  • Gently pull the meat out of the shell, resting it on top while keeping it attached at the base.
  • Brush the lobster meat with olive oil, then season with salt, pepper, smoked paprika, and garlic powder.
  • Step 2: Cook the Lobster
  • Grill Method:
  • Preheat the grill to medium-high heat (400°F/200°C).
  • Place the lobster tails meat-side down on the grill for 3-4 minutes, then flip and cook another 4-5 minutes, basting with cowboy butter until opaque and slightly charred.
  • Oven Broiled Method:
  • Preheat the broiler to high.
  • Place the lobster tails on a baking sheet and brush with some cowboy butter.
  • Broil for 8-10 minutes, basting with butter every few minutes, until the meat is opaque and reaches an internal temp of 140°F (60°C).
  • Step 3: Make the Cowboy Butter
  • While the lobster cooks, mix all cowboy butter ingredients in a small bowl.
  • Taste and adjust seasoning as needed.
  • Step 4: Serve And Enjoy
  • Drizzle or brush more cowboy butter over the cooked lobster tails.
  • Garnish with extra parsley and lemon wedges.
  • Serve immediately with crusty bread or grilled vegetables.
