In a separate bowl, whisk together buttermilk, eggs, and melted butter.

Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).
Fold in the corn kernels, diced jalapeños, and cheddar cheese (if using).
Step 5: Bake the Cornbread
Pour the batter into the prepared skillet or baking dish.
Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Step 6: Make the Lime Honey Glaze
While the cornbread is baking, whisk together honey, lime juice, and lime zest in a small bowl.
Step 7: Glaze And Serve
As soon as the cornbread is out of the oven, brush or drizzle the lime honey glaze over the top.
Let it cool for 5 minutes, then slice and serve warm!
