Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, whisk together olive oil, balsamic vinegar, mustard, garlic powder, salt, pepper, and optional honey.
  • Toss Brussels sprouts and chicken in the balsamic mixture until coated.
  • Spread everything in a single layer on the sheet pan.
  • Roast for 25–30 minutes, flipping once, until chicken is cooked through (165°F internal temp) and Brussels sprouts are golden and caramelized.
  • Let rest for 5 minutes, slice chicken, and serve warm.

Notes

  •   Add chopped bacon to roast alongside for extra flavor
  •   Add diced sweet potato or red onion for a twist
  •   Finish with lemon zest for brightness
  •   Sprinkle Parmesan just before serving
