  • 1 lb ground beef
  • 1/2 lb ground pork optional for added flavor
  • 1 cup finely chopped mushrooms cremini, button, or shiitake
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup breadcrumbs preferably fresh
  • 1/4 cup milk
  • 1 large egg
  • 1 cup shredded Swiss cheese
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 1/4 cup ketchup for topping
  • 1 tbsp Dijon mustard optional, for a tangy glaze

  • Preheat the oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  • In a medium skillet, sauté the chopped mushrooms, onion, and garlic over medium heat for 5-7 minutes, until the mushrooms release their moisture and the vegetables become soft. Let cool slightly.
  • In a large mixing bowl, combine the ground beef, ground pork (if using), sautéed mushrooms, breadcrumbs, milk, egg, thyme, rosemary, salt, and pepper. Mix until well combined.
  • Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf shape.
  • Top the meatloaf with shredded Swiss cheese, pressing it gently into the top.
  • In a small bowl, mix the ketchup with Dijon mustard (if using) and spread it over the top of the cheese.
  • Bake for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (71°C). Let the meatloaf rest for 5-10 minutes before slicing.
  • Serve with mashed potatoes, roasted vegetables, or a side salad.

Notes

  • For a more flavorful meatloaf, you can add Worcestershire sauce or a dash of soy sauce to the meat mixture.
  • If you prefer a thicker crust, you can bake the meatloaf uncovered for the last 10 minutes.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days and can be reheated in the microwave or oven.
