Ingredients
  

  • 1 lb 450g ground beef (or ground turkey)
  • 1 packet taco seasoning or homemade: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne pepper
  • 1 can 14 oz black beans, drained and rinsed
  • 1 cup frozen corn optional
  • 1 can 14 oz diced tomatoes (drained) or 1 cup chunky salsa
  • 8-10 flour tortillas 8-inch size
  • 2 cups shredded Mexican cheese blend or cheddar and Monterey Jack
  • 1 cup sour cream
  • 1/4 cup chopped green onions for garnish
  • 1/4 cup chopped fresh cilantro for garnish

  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Cook Ground Beef: In a large skillet over medium heat, cook ground beef until browned. Drain excess grease.
  • Season Beef: Add taco seasoning, diced tomatoes (or salsa), and a splash of water to the skillet. Stir well and simmer for 3-4 minutes until the mixture thickens slightly.
  • Layer Ingredients:
  • Spread a thin layer of the beef mixture on the bottom of the baking dish.
  • Place a layer of tortillas over the beef. (Cut them as needed to fit.)
  • Spread a layer of sour cream over the tortillas, followed by black beans, corn, and shredded cheese.
  • Repeat layers (beef, tortillas, sour cream, beans, cheese) until all ingredients are used, ending with a layer of cheese on top.
  • Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • Garnish and Serve: Let the taco lasagna cool for 5 minutes. Garnish with green onions and cilantro before serving.

Notes

  • Substitute flour tortillas with corn tortillas for a gluten-free option.
  • Add diced jalapeños or a drizzle of hot sauce for extra spice.
  • This dish can be made ahead and refrigerated before baking—just increase the baking time by 10-15 minutes.
