  • 4 cups frozen hash browns or 4 large potatoes peeled and diced
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 can 10.5 oz cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley or chives chopped (for garnish)

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • Prepare Ingredients: If using fresh potatoes, peel and dice them into small cubes. If using frozen hash browns, no need to thaw.
  • Cook Kielbasa: In a skillet over medium heat, cook the kielbasa slices until browned and slightly crispy, about 5-7 minutes. Remove from heat and set aside.
  • Mix Casserole Filling: In a large bowl, combine sour cream, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Stir in shredded cheddar cheese and mix well.
  • Assemble the Casserole:
  • Spread a layer of diced potatoes (or hash browns) in the prepared baking dish.
  • Add the cooked kielbasa slices evenly on top of the potatoes.
  • Pour the cheesy mixture over the kielbasa and potatoes, spreading it evenly.
  • Bake: Sprinkle the grated Parmesan cheese over the top.
  • Cover the casserole with aluminum foil and bake for 30-35 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the casserole is bubbly and golden brown on top.
  • Serve: Garnish with fresh parsley or chives and serve hot.
