  • Gently fold in the diced strawberries. Set aside.
  • Prepare the French Toast Batter:
  • In a shallow dish, whisk together the eggs, milk, heavy cream (if using), sugar, vanilla extract, and cinnamon until well combined.
  • Assemble the French Toast:
  • Spread a thick layer of the cream cheese and strawberry mixture onto one slice of bread. Top with another slice of bread to make a sandwich. Repeat with the remaining bread slices.
  • Cook the French Toast:
  • Heat a large non-stick skillet or griddle over medium heat. Melt 1 tablespoon of butter in the pan.
  • Dip each sandwich into the egg batter, ensuring both sides are well coated, and let any excess batter drip off.
  • Place the coated sandwiches onto the skillet and cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with remaining sandwiches, adding more butter as needed.
  • Serve:
