  • ¾ cup sweetened condensed milk
  • ¼ cup granulated sugar
  • ¼ cup lime juice freshly squeezed
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • 1 ½ tsp unflavored gelatin optional, for extra firmness
  • 2 tbsp water to dissolve gelatin
  • For Garnish:
  • Whipped cream
  • Lime slices
  • Crushed graham crackers

Instructions
 

  • Prepare the Crust:
  • Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  • Press mixture firmly into a 9-inch springform pan.
  • Refrigerate while making the filling.
  • Make the Cheesecake Filling:
  • In a small bowl, dissolve gelatin in warm water (optional).
  • Blend avocados, cream cheese, condensed milk, sugar, lime juice, lime zest, and vanilla until smooth.
  • Stir in dissolved gelatin (if using) and mix well.
  • Assemble And Chill:
  • Pour filling over crust and smooth the top.
  • Cover and refrigerate for at least 4 hours (overnight is best).
  • Serve And Enjoy:
  • Garnish with whipped cream, lime slices, and extra graham cracker crumbs.
