  • For the Chicken:
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • For the Pasta And Sauce:
  • 4 cloves garlic minced
  • 2 cups marinara sauce store-bought or homemade
  • 2 cups chicken broth
  • 1 14.5 oz can diced tomatoes, undrained
  • ½ teaspoon red pepper flakes optional, for heat
  • 8 oz penne or rigatoni pasta
  • ½ cup heavy cream optional, for a creamy version
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • For Garnish:
  • ¼ cup fresh basil or parsley chopped
  • Extra Parmesan cheese for topping

Instructions
 

  • Cook the Chicken:
  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken pieces with salt, pepper, Italian seasoning, and garlic powder.
  • Add chicken to the skillet and cook until golden brown on all sides (5-6 minutes). Remove and set aside.
  • Sauté Garlic And Start the Sauce:
  • In the same skillet, reduce heat to medium and add garlic. Sauté for 30 seconds until fragrant.
  • Pour in marinara sauce, diced tomatoes, chicken broth, and red pepper flakes. Stir to combine.
  • Cook the Pasta:
  • Add uncooked pasta directly into the skillet, stirring to coat.
  • Cover and let simmer over medium-low heat for 12-15 minutes, stirring occasionally, until pasta is tender.
  • Combine Everything:
  • Return the cooked chicken to the skillet and stir.
  • If using, pour in heavy cream for a richer sauce.
  • Sprinkle mozzarella and Parmesan cheese over the top. Cover and cook for another 2-3 minutes until the cheese melts.
  • Serve And Enjoy:
  • Garnish with fresh basil or parsley and extra Parmesan cheese.
  • Serve hot with garlic bread or a side salad!
