Ingredients
  

  • For the Pasta:
  • 8 oz linguine spaghetti, or penne
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ½ teaspoon red pepper flakes optional, for spice
  • For the Shrimp And Sauce:
  • 1 lb shrimp peeled And deveined
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach
  • ¼ cup white wine or chicken broth
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • Fresh basil or parsley for garnish

Instructions
 

  • Step 1: Cook the Pasta
  • Bring a pot of salted water to a boil and cook pasta according to package instructions.
  • Reserve ½ cup of pasta water, then drain and set aside.
  • Step 2: Sauté the Shrimp
  • Heat olive oil in a large skillet over medium-high heat.
  • Season shrimp with salt, pepper, and Italian seasoning.
  • Cook shrimp for 1-2 minutes per side until pink and opaque. Remove and set aside.
  • Step 3: Make the Sauce
  • In the same skillet, add garlic and red pepper flakes, sautéing for 30 seconds.
  • Add cherry tomatoes and cook for 2-3 minutes until they soften.
  • Pour in white wine (or broth) and let it simmer for 1-2 minutes.
  • Stir in butter, lemon juice, and spinach, cooking until spinach wilts.
  • Step 4: Combine And Serve
  • Add cooked pasta and shrimp back into the skillet. Toss well to coat.
  • If needed, add reserved pasta water to adjust sauce consistency.
  • Sprinkle with Parmesan cheese and garnish with fresh basil or parsley.

Notes

  • Want it creamy? Add ½ cup heavy cream before adding spinach.
  • No shrimp? Use chicken or mushrooms as a substitute.
  • Spice it up? Add more red pepper flakes or a dash of cayenne.
  • Make it gluten-free? Use gluten-free pasta.
