- 1/2 lb spicy Italian sausage removed from casing
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 can 14.5 oz diced tomatoes, undrained
- 4 cups chicken broth
- 1 cup carrots sliced
- 1 cup celery chopped
- 1 cup zucchini chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes adjust for desired spice level
- Salt and pepper to taste
- 1/2 cup fresh spinach chopped
- 1/4 cup heavy cream optional, for a creamy version

Step 1: Cook the Chicken and Sausage
In a large pot, heat olive oil over medium heat.
Add the chicken pieces and cook for about 5-6 minutes until browned. Remove and set aside.
In the same pot, add the Italian sausage and cook until browned, breaking it up with a spoon, about 5 minutes.
Step 2: Add the Vegetables
Add the chopped onion and minced garlic to the pot and cook until softened, about 3-4 minutes.
Stir in the carrots, celery, and zucchini, and cook for an additional 5 minutes.
Step 3: Simmer the Soup
Add the diced tomatoes, chicken broth, basil, oregano, and red pepper flakes.
Bring the soup to a boil, then reduce to a simmer. Let it simmer for about 15-20 minutes or until the vegetables are tender.
Step 4: Add Chicken and Spinach
Return the cooked chicken to the pot and stir in the spinach. Cook for another 2-3 minutes until the spinach is wilted.
Taste the soup and adjust with salt and pepper as needed.
