  • 1 lb boneless skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 lb spicy Italian sausage removed from casing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 cup zucchini chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes adjust for desired spice level
  • Salt and pepper to taste
  • 1/2 cup fresh spinach chopped
  • 1/4 cup heavy cream optional, for a creamy version

Instructions
 

  • Step 1: Cook the Chicken and Sausage
  • In a large pot, heat olive oil over medium heat.
  • Add the chicken pieces and cook for about 5-6 minutes until browned. Remove and set aside.
  • In the same pot, add the Italian sausage and cook until browned, breaking it up with a spoon, about 5 minutes.
  • Step 2: Add the Vegetables
  • Add the chopped onion and minced garlic to the pot and cook until softened, about 3-4 minutes.
  • Stir in the carrots, celery, and zucchini, and cook for an additional 5 minutes.
  • Step 3: Simmer the Soup
  • Add the diced tomatoes, chicken broth, basil, oregano, and red pepper flakes.
  • Bring the soup to a boil, then reduce to a simmer. Let it simmer for about 15-20 minutes or until the vegetables are tender.
  • Step 4: Add Chicken and Spinach
  • Return the cooked chicken to the pot and stir in the spinach. Cook for another 2-3 minutes until the spinach is wilted.
  • Taste the soup and adjust with salt and pepper as needed.
  • Step 5: Optional Creamy Version
  • For a creamier soup, stir in the heavy cream and let it simmer for another 2 minutes.
  • Step 6: Serve
  • Serve the soup hot, and enjoy! Garnish with fresh herbs if desired.
