- 1 tbsp olive oil
- 1 small onion diced
- 1 red bell pepper chopped
- 1 zucchini chopped (optional)
- 1 cup corn kernels fresh, frozen, or canned
- 2 cloves garlic minced
- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp cumin
- Salt & pepper to taste
- 1 cup shredded cheddar cheese

Brown the beef:
Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon (about 5–7 minutes). Drain excess fat if needed and set aside.
Sauté the veggies:
In the same skillet, add olive oil. Toss in the onion, bell pepper, zucchini, and corn. Cook for 5–6 minutes until softened.
Combine and season:
Add garlic and seasonings (chili powder, paprika, cumin, salt, and pepper). Stir and cook for 1 minute until fragrant. Return the beef to the pan and mix everything together.
Add cheese:
Sprinkle shredded cheese over the top. Cover the skillet for 2–3 minutes until the cheese is melted.
Serve:
Top with chopped cilantro, avocado slices, or a squeeze of lime if desired.
