Ingredients
  

  • 1 lb ground beef 80–90% lean
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 red bell pepper chopped
  • 1 zucchini chopped (optional)
  • 1 cup corn kernels fresh, frozen, or canned
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt & pepper to taste
  • 1 cup shredded cheddar cheese
  • Optional: chopped cilantro avocado, sour cream, lime wedges

Instructions
 

  • Brown the beef:
  • Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon (about 5–7 minutes). Drain excess fat if needed and set aside.
  • Sauté the veggies:
  • In the same skillet, add olive oil. Toss in the onion, bell pepper, zucchini, and corn. Cook for 5–6 minutes until softened.
  • Combine and season:
  • Add garlic and seasonings (chili powder, paprika, cumin, salt, and pepper). Stir and cook for 1 minute until fragrant. Return the beef to the pan and mix everything together.
  • Add cheese:
  • Sprinkle shredded cheese over the top. Cover the skillet for 2–3 minutes until the cheese is melted.
  • Serve:
  • Top with chopped cilantro, avocado slices, or a squeeze of lime if desired.

Notes

  • Add a can of black beans or diced tomatoes to bulk it up.
  • Serve with tortilla chips or over rice for a full meal.
  • Make it spicy with jalapeños or hot sauce.
