  • ¾ cup light brown sugar packed
  • 2 large eggs
  • tsp vanilla extract

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup maraschino cherries drained, chopped, and patted dry
  • cups white chocolate chips or semi-sweet if preferred

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together butter and sugars until light and fluffy.
  • Add eggs, one at a time, then stir in vanilla and almond extract.
  • In another bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients.
  • Gently fold in chopped maraschino cherries and white chocolate chips.
  • Drop tablespoon-sized mounds of dough onto the prepared baking sheet.
  • Bake for 10–12 minutes, or until edges are lightly golden. Centers will look soft but will set as they cool.
  • Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Dry cherries well with paper towels to avoid excess moisture in the dough.
  • Chill the dough for 30 minutes if cookies spread too much during baking.
  • These freeze well—store baked cookies in an airtight container up to 3 months.
