- 3 lbs chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion sliced
- 3 cloves garlic minced
- 3 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 6 hoagie or French rolls split
- 6 slices provolone cheese
- Optional: butter for toasting rolls

Sear the Roast (Optional):
In a large skillet, heat olive oil over medium-high heat. Season the roast with salt and pepper, then sear each side until browned (2–3 minutes per side).
Add to Slow Cooker:
Place sliced onion and garlic in the bottom of your slow cooker. Add seared roast on top. Pour in beef broth, Worcestershire, soy sauce, thyme, and rosemary.
Cook:
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is very tender and easy to shred.
Shred the Meat:
Remove roast from slow cooker and shred using two forks. Return shredded beef to the broth.
Toast the Rolls:
Optional but delicious—lightly butter the inside of each roll and toast in a skillet or under a broiler until golden.
Assemble the Sandwiches:
Pile shredded beef onto rolls, top with provolone cheese, and broil briefly to melt cheese if desired. Serve with a small bowl of the cooking broth (au jus) for dipping.
