  • 1 whole chicken about 3.5–4 lbs
  • 6 –8 garlic cloves minced or smashed
  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon fresh rosemary or 1 tsp dried
  • 1 tablespoon fresh thyme or 1 tsp dried
  • 1 lemon halved
  • Salt and pepper to taste
  • 1 onion quartered (optional)
  • 1 cup chicken broth or water for the pan

  • Preheat Oven:
  • Preheat your oven to 400°F (200°C).
  • Prep the Chicken:
  • Remove giblets and pat the chicken dry with paper towels. Season inside and out with salt and pepper.
  • Make the Garlic Rub:
  • In a small bowl, mix olive oil (or butter) with minced garlic, rosemary, and thyme.
  • Season:
  • Rub the garlic-herb mixture all over the chicken, including under the skin where possible for extra flavor.
  • Stuff the Chicken:
  • Stuff the cavity with lemon halves and onion quarters.
  • Roast:
  • Place the chicken breast-side up in a roasting pan or oven-safe skillet. Add broth or water to the bottom to keep it moist. Roast uncovered for about 1 hour and 15 minutes, or until internal temperature reaches 165°F (74°C) at the thickest part.
  • Rest & Serve:
  • Let the chicken rest for 10–15 minutes before carving. Serve with the pan juices.

Notes

  • Use garlic powder for a shortcut, but fresh garlic gives the best flavor.
  • Pairs perfectly with mashed potatoes, roasted veggies, or a simple green salad.
  • Leftovers make great chicken salad or soup.
