- 6 –8 garlic cloves minced or smashed
- 2 tablespoons olive oil or melted butter
- 1 tablespoon fresh rosemary or 1 tsp dried
- 1 tablespoon fresh thyme or 1 tsp dried
- 1 lemon halved
- Salt and pepper to taste
- 1 onion quartered (optional)
- 1 cup chicken broth or water for the pan

Preheat Oven:
Preheat your oven to 400°F (200°C).
Prep the Chicken:
Remove giblets and pat the chicken dry with paper towels. Season inside and out with salt and pepper.
Make the Garlic Rub:
In a small bowl, mix olive oil (or butter) with minced garlic, rosemary, and thyme.
Season:
Rub the garlic-herb mixture all over the chicken, including under the skin where possible for extra flavor.
Stuff the Chicken:
Stuff the cavity with lemon halves and onion quarters.
Roast:
Place the chicken breast-side up in a roasting pan or oven-safe skillet. Add broth or water to the bottom to keep it moist. Roast uncovered for about 1 hour and 15 minutes, or until internal temperature reaches 165°F (74°C) at the thickest part.
Rest & Serve:
Let the chicken rest for 10–15 minutes before carving. Serve with the pan juices.
