Instructions

  • Season the Salmon:
  • Pat salmon dry. Season both sides with salt and pepper.
  • Sear the Salmon:
  • Heat olive oil and butter in a skillet over medium-high heat.
  • Add salmon (skin-side down if using) and cook for 4–5 minutes per side, or until golden and just cooked through. Remove and set aside.
  • Make the Sauce:
  • In the same skillet, lower heat to medium. Add garlic and sauté for 30 seconds until fragrant.
  • Stir in Dijon mustard, lemon juice, and cream. Simmer for 2–3 minutes until slightly thickened.
  • (Optional: Stir in Parmesan and lemon zest for extra richness.)
  • Finish & Serve:
  • Return salmon to the skillet and spoon sauce over top. Cook 1 more minute to heat through.
  • Garnish with chopped parsley. Serve warm with rice, potatoes, or veggies.

Notes

  • Use half-and-half instead of cream for a lighter version.
  • You can substitute trout or cod for salmon.
  • Add sautéed spinach or mushrooms to the sauce for a veggie boost.
