Ingredients
  

  • 8 oz elbow macaroni or pasta of choice
  • 2 cups small broccoli florets fresh or frozen
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk whole or 2%
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese optional
  • Pinch of paprika or mustard powder optional, for depth of flavor

Instructions
 

  • Cook Pasta & Broccoli
  • Bring a large pot of salted water to a boil.
  • Add macaroni and cook according to package directions.
  • In the last 3 minutes of cooking, add broccoli florets to the same pot.
  • Drain both and set aside.
  • Make Cheese Sauce
  • In the same pot, melt butter over medium heat.
  • Whisk in flour and cook for 1 minute to form a roux.
  • Gradually whisk in milk until smooth and thickened (about 3–4 minutes).
  • Add garlic powder, onion powder, salt, pepper, and optional spices.
  • Add Cheese
  • Reduce heat to low. Stir in cheddar and Parmesan cheese until melted and smooth.
  • Combine
  • Stir cooked pasta and broccoli back into the cheese sauce. Mix well until everything is coated.
  • Serve
  • Garnish with extra cheese or a sprinkle of paprika if desired. Serve warm!

Notes

  • You can use pre-steamed frozen broccoli if you prefer.
  • For extra protein, stir in cooked chicken or chickpeas.
  • Swap cheddar with Gruyère, mozzarella, or gouda for fun variations.
