Ingredients
  

  • 3 cups cooked and shredded chicken breast
  • 8 oz bowtie or rotini pasta
  • 1 cup red seedless grapes halved
  • 1 cup green seedless grapes halved (optional)
  • 1/2 cup chopped celery
  • 1/4 cup chopped green onions
  • 1/4 cup sliced almonds or chopped pecans optional
  • Salt and pepper to taste
  • For the Creamy Poppy Seed Dressing:
  • 3/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt or sour cream
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp poppy seeds
  • Salt to taste

Instructions
 

  • Cook the Pasta
  • Cook pasta in salted boiling water according to package directions. Drain, rinse with cold water, and set aside.
  • Make the Dressing
  • In a small bowl, whisk together mayonnaise, Greek yogurt, honey, vinegar, poppy seeds, and a pinch of salt. Adjust seasoning to taste.
  • Combine Ingredients
  • In a large mixing bowl, combine cooked pasta, shredded chicken, grapes, celery, green onions, and nuts (if using).
  • Add Dressing
  • Pour the poppy seed dressing over the salad and toss until everything is evenly coated.
  • Chill & Serve
  • Refrigerate for at least 30 minutes for flavors to meld. Serve chilled, and enjoy!
