- 1/2 tsp salt
- 1 egg white
- 1 tsp vanilla extract

Preheat Oven
Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper or lightly spray with cooking spray.
Mix Sugar & Cinnamon
In a small bowl, mix together sugar, cinnamon, and salt. Set aside.
Whisk Egg White
In a large mixing bowl, whisk the egg white and vanilla extract until frothy (not stiff).
Coat Almonds
Add almonds to the egg white mixture and stir to coat well. Then, sprinkle in the cinnamon sugar mixture and toss until almonds are evenly coated.
Bake
Spread almonds in a single layer on the prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes to ensure even coating.
Cool & Store
Remove from oven and let cool completely. Almonds will crisp up as they cool. Store in an airtight container for up to 2 weeks.
