  • 1 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 1/2 tsp salt
  • 1 egg white
  • 1 tsp vanilla extract
  • 3 cups raw whole almonds
  • Cooking spray optional, for baking sheet

Instructions
 

  • Preheat Oven
  • Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper or lightly spray with cooking spray.
  • Mix Sugar & Cinnamon
  • In a small bowl, mix together sugar, cinnamon, and salt. Set aside.
  • Whisk Egg White
  • In a large mixing bowl, whisk the egg white and vanilla extract until frothy (not stiff).
  • Coat Almonds
  • Add almonds to the egg white mixture and stir to coat well. Then, sprinkle in the cinnamon sugar mixture and toss until almonds are evenly coated.
  • Bake
  • Spread almonds in a single layer on the prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes to ensure even coating.
  • Cool & Store
  • Remove from oven and let cool completely. Almonds will crisp up as they cool. Store in an airtight container for up to 2 weeks.

Notes

  • You can swap almonds for pecans, walnuts, or cashews.
  • Perfect as a homemade holiday gift in jars or treat bags.
  • Make it spicy by adding a pinch of cayenne to the sugar mixture!
