  • 1 bunch asparagus trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: lemon slices fresh parsley for garnish

  • Preheat oven:
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • Prepare garlic lemon oil:
  • In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, salt, and pepper.
  • Assemble pan:
  • Place salmon fillets skin-side down on one side of the pan. Arrange asparagus on the other side. Drizzle garlic lemon oil over both salmon and asparagus.
  • Roast:
  • Bake for 12–15 minutes or until salmon flakes easily with a fork and asparagus is tender-crisp.
  • Garnish and serve:
  • Garnish with lemon slices and fresh parsley. Serve hot.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the oil mixture.
  • Swap asparagus with green beans or broccoli if desired.
  • Great served over quinoa, rice, or mashed potatoes.
