- 1 zucchini sliced
- 1 red bell pepper sliced
- 1 yellow squash sliced
- 1 small red onion sliced
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 garlic cloves minced
- 1 teaspoon dried Italian herbs or oregano/basil
- Salt and black pepper to taste
- Lemon wedges for serving
- Fresh parsley for garnish

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Prepare the veggies: In a large bowl, toss zucchini, bell pepper, squash, onion, and cherry tomatoes with 1 tbsp olive oil, half of the garlic, salt, pepper, and half the herbs.
Arrange on baking sheet: Spread the vegetables evenly on one side of the baking sheet.
Season the salmon: Place the salmon fillets on the other side. Drizzle with 1 tbsp olive oil, lemon juice, remaining garlic, and herbs. Sprinkle with salt and pepper.
Bake for 20–25 minutes, or until salmon is flaky and veggies are tender.
Serve: Plate with lemon wedges and garnish with fresh parsley.
