Ingredients
  

  • 2 salmon fillets about 6 oz each
  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 1 yellow squash sliced
  • 1 small red onion sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 garlic cloves minced
  • 1 teaspoon dried Italian herbs or oregano/basil
  • Salt and black pepper to taste
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • Prepare the veggies: In a large bowl, toss zucchini, bell pepper, squash, onion, and cherry tomatoes with 1 tbsp olive oil, half of the garlic, salt, pepper, and half the herbs.
  • Arrange on baking sheet: Spread the vegetables evenly on one side of the baking sheet.
  • Season the salmon: Place the salmon fillets on the other side. Drizzle with 1 tbsp olive oil, lemon juice, remaining garlic, and herbs. Sprinkle with salt and pepper.
  • Bake for 20–25 minutes, or until salmon is flaky and veggies are tender.
  • Serve: Plate with lemon wedges and garnish with fresh parsley.

Notes

  • Use any veggies you love: broccoli, asparagus, or carrots work great.
  • Add a sprinkle of Parmesan or feta for extra flavor.
  • Leftovers keep well for up to 2 days in the fridge.
