Ingredients
  

  • 2 cod fillets about 6 oz each
  • 4 cups fresh spinach or 1 box frozen, thawed and drained
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • Juice of ½ lemon
  • Zest of ½ lemon optional
  • Salt and black pepper to taste
  • ¼ teaspoon paprika optional
  • Lemon wedges for serving

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Sauté spinach: In a skillet over medium heat, add 1 tablespoon olive oil and minced garlic. Cook for 30 seconds, then add spinach. Sauté until wilted (2–3 minutes). Season lightly with salt and pepper.
  • Prepare baking dish: Spread the sautéed spinach evenly in the bottom of a baking dish.
  • Season cod: Pat cod fillets dry. Place over spinach. Drizzle with remaining olive oil, squeeze lemon juice on top, and season with salt, pepper, and optional paprika or lemon zest.
  • Bake for 12–15 minutes, or until cod flakes easily with a fork.
  • Serve hot with lemon wedges on the side.

Notes

  • You can swap cod with haddock or tilapia.
  • Add cherry tomatoes or mushrooms to the spinach for extra flavor.
  • Great served with rice, quinoa, or cauliflower mash.
