- 4 cups fresh spinach or 1 box frozen, thawed and drained
- 2 tablespoons olive oil
- 2 garlic cloves minced
- Juice of ½ lemon
- Zest of ½ lemon optional
- Salt and black pepper to taste
- ¼ teaspoon paprika optional
- Lemon wedges for serving

Preheat oven to 400°F (200°C).
Sauté spinach: In a skillet over medium heat, add 1 tablespoon olive oil and minced garlic. Cook for 30 seconds, then add spinach. Sauté until wilted (2–3 minutes). Season lightly with salt and pepper.
Prepare baking dish: Spread the sautéed spinach evenly in the bottom of a baking dish.
Season cod: Pat cod fillets dry. Place over spinach. Drizzle with remaining olive oil, squeeze lemon juice on top, and season with salt, pepper, and optional paprika or lemon zest.
Bake for 12–15 minutes, or until cod flakes easily with a fork.
Serve hot with lemon wedges on the side.
