Ingredients
  

  • For the Meatballs:
  • 1 lb 450g ground turkey
  • ¼ cup almond flour or breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 2 tbsp grated Parmesan optional
  • 1 tsp dried Italian herbs
  • Salt & pepper to taste
  • Olive oil for searing
  • For the Zoodles:
  • 3 –4 medium zucchini spiralized
  • 1 tbsp olive oil or butter
  • 1 clove garlic minced
  • Salt to taste
  • Optional: pinch of red pepper flakes Parmesan, or fresh basil

Instructions
 

  • Make the meatballs
  • In a bowl, mix all meatball ingredients until well combined. Form into 1.5-inch balls (about 16–18 meatballs).
  • Cook the meatballs
  • Heat olive oil in a large skillet over medium heat. Sear meatballs for 2–3 minutes per side until golden. Cover and cook 5–7 more minutes until fully cooked through (internal temp 165°F/74°C). Remove and set aside.
  • Prepare the zoodles
  • In the same skillet, add olive oil and garlic. Sauté briefly, then toss in zucchini noodles. Cook for 2–3 minutes until just tender. Season lightly.
  • Serve
  • Plate zoodles with meatballs on top. Garnish with Parmesan, basil, or chili flakes if desired.

Notes

  • Add marinara sauce or pesto for extra flavor.
  • Swap turkey for chicken, beef, or plant-based ground.
  • Zoodles can be spiralized fresh or store-bought for convenience.
