- 3 medium carrots thinly sliced
- 2 celery stalks sliced
- 6 cups chicken broth low sodium
- 2 cups cooked shredded chicken rotisserie works great
- 2 medium zucchini spiralized
- 1 teaspoon dried thyme
- Salt & pepper to taste
- Juice of ½ lemon optional, for brightness
- Fresh parsley chopped (for garnish)

Sauté Veggies
In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened (about 5 minutes).
Add Broth and Seasoning
Pour in chicken broth, thyme, salt, and pepper. Bring to a gentle boil.
Add Chicken
Stir in cooked chicken. Reduce heat to a simmer and cook for another 5–10 minutes.
Add Zoodles
Add zucchini noodles and cook for 2–3 minutes, just until tender (don’t overcook or they’ll get mushy).
Finish
