  • 3 medium carrots thinly sliced
  • 2 celery stalks sliced
  • 6 cups chicken broth low sodium
  • 2 cups cooked shredded chicken rotisserie works great
  • 2 medium zucchini spiralized
  • 1 teaspoon dried thyme
  • Salt & pepper to taste
  • Juice of ½ lemon optional, for brightness
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Sauté Veggies
  • In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened (about 5 minutes).
  • Add Broth and Seasoning
  • Pour in chicken broth, thyme, salt, and pepper. Bring to a gentle boil.
  • Add Chicken
  • Stir in cooked chicken. Reduce heat to a simmer and cook for another 5–10 minutes.
  • Add Zoodles
  • Add zucchini noodles and cook for 2–3 minutes, just until tender (don’t overcook or they’ll get mushy).
  • Finish
  • Stir in lemon juice, taste and adjust seasoning. Ladle into bowls and garnish with parsley.
