- 1/4 cup pure pumpkin puree
- 1/4 cup honey or maple syrup
- 1/3 cup vanilla protein powder
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 –2 tablespoons chia seeds or flaxseed meal optional for added fiber
- Pinch of salt

In a large bowl, combine oats, protein powder, pumpkin pie spice, cinnamon, chia seeds, and salt.
Stir Wet Ingredients
Add peanut butter, pumpkin puree, honey, and vanilla extract. Mix until a sticky dough forms.
Roll
Scoop about 1 tablespoon of dough and roll into balls. Place on a parchment-lined tray.
