  • 1/4 cup pure pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1/3 cup vanilla protein powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 –2 tablespoons chia seeds or flaxseed meal optional for added fiber
  • Pinch of salt

  • Mix
  • In a large bowl, combine oats, protein powder, pumpkin pie spice, cinnamon, chia seeds, and salt.
  • Stir Wet Ingredients
  • Add peanut butter, pumpkin puree, honey, and vanilla extract. Mix until a sticky dough forms.
  • Roll
  • Scoop about 1 tablespoon of dough and roll into balls. Place on a parchment-lined tray.
  • Chill
  • Refrigerate for 20 minutes until firm. Store in an airtight container in the fridge for up to 1 week.

Notes

For a nut-free version, use sunflower seed butter.
Add mini chocolate chips or chopped pecans for extra crunch.
Can be frozen for up to 2 months!
