  • 4 boneless skinless chicken breasts
  • 1 cup cooked broccoli chopped
  • 3/4 cup shredded cheddar cheese
  • 2 tablespoons cream cheese softened
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • Toothpicks for sealing (optional)

Instructions
 

  • Preheat Oven
  • Preheat oven to 400°F (200°C).
  • Prepare Filling
  • In a bowl, mix chopped broccoli, cheddar, cream cheese, garlic powder, salt, and pepper.
  • Butterfly Chicken
  • Slice a pocket into the side of each chicken breast (don’t cut all the way through).
  • Stuff each breast with 2–3 tablespoons of the broccoli-cheese mixture.
  • Secure with toothpicks if needed.
  • Sear the Chicken
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Sear stuffed chicken breasts for 2–3 minutes per side, until golden.
  • Bake
  • Transfer skillet to oven and bake for 15–18 minutes, or until chicken is fully cooked (internal temp: 165°F / 74°C).
  • Rest & Serve
  • Let rest 5 minutes before slicing. Serve with roasted veggies or salad.
